  1. Heat a non-stick saucepan, add orange juice, black peppercorns, cardamom, clove, star anise, nutmeg powder, cinnamon stick, boil it on medium heat for 10 to15 mins and stir this continuously. After 15 mins add sugar and black salt, mix well. Cook for 2 to 3 mins, off the flame. Cool it completely and pour this sweet and sour orange chutney into a glass jar and keep this jar inside the refrigerator. You can store this chutney for about 2 weeks..

  4. Making Tikki:: In a mixing bowl, add coarsely crushed peas, grated paneer, mashed potatoes, cornflour, green chillies, ginger paste, coriander leaves and mix well. Add all the dry ingredients in this mixture, mix well. Divide the mixture into equal portions and shape them into round tikkis. Heat sufficient oil in a non-stick kadhai and shallow fry the tikkis, a few at a time, till golden brown. Drain all the tikkis on absorbent paper. Tikkis (patties) are ready.
